Red Velvet Cupcakes

You know what scares me about red velvet cake? The red. You guys know that it’s all food coloring right? I’ve made red velvet cake a number of times before, but I’ve never been able to get over the addition of food coloring to the batter. I usually leave it out all together, BUT in this particular case, I was taking the cupcakes to a BBQ and I didn’t want to bring faux red velvet cake, so I added in as much coloring as I could muster. I don’t know what it is… but Red #40 is safe right? It’s not like the atomic green that they put in Mountain Dew, is it?! My dear BBQing friends, I hope I have not poisoned you…

Chocolate Citrus Biscotti

I was home visiting the parental units recently and decided to bring half my pantry along because, well truthfully, the baking helped me get through the weekend. Now wait, don’t get me wrong. I love my parents, but going home to visit means relinquishing all forms of adult freedom and independence. For someone who’s been living on her own for eight years, the smothering gets to be a bit overwhelming after a couple of days, hence my coping mechanism: baking.

Pizza Dough

Let’s talk about yeast breads again today. I think that amongst the population of casual bakers, yeasted bread is way too much effort for the payout. I’ll start by saying that I agreed with that sentiment when I first started working with yeast doughs. Over time though, you start getting the routine down and it’s really not so bad. In fact, it can be downright satisfying. You can even spread the endeavor out over a couple of days so that it isn’t as daunting. A stand mixer always helps, but it’s not a necessity. I’m sure that I’m not an expert at bread kneading, but let me show you my tricks anyway.
